Roasted Veggie and Quinoa Burrito

2 small sweet potatoes (or kumra if you're a kiwi cook), peeled and diced
1 red pepper, diced
1 shallot or 1/2 red onion, diced
2 teaspoons olive oil
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
Salt and pepper, to taste
1 can black beans, rinsed and drained
1 can whole kernel corn
1 tomato, diced
1/4 cup cilantro, chopped
2 teaspoons lime juice
1 cup quinoa, rinsed and drained
2-1/4 cups chicken broth, divided
2 cups shredded cheddar cheese
8-10 whole wheat tortillas or wraps
