Roasted Veggies and Feta Whole Meal Couscous
This roast veggies & feta couscous is one of those superb and quick lunch or dinner meals that doesn't require much thinking, when you just want to come up with something healthy (pretty uncomplicated, yet sophisticated) to put on the table in front of your family or friends. I can tell you one more thing about it, we all love it all the time any time!
120 g feta cheese (crumbled)
1/2 butternut squash
2 onions (red)
1 pepper (red)
2 medium carrots
3 tbsp sunflower seeds (slightly roasted)
1-2 tbsp olive oil
to taste coriander or parsley to garnish
to taste salt
to taste pepper or some chilli flakes
1. Wash and peel all the vegetables (carrots butternut squash and red onions).
