Saffron Buns for St. Lucy's Day (also known as Lussekatter). A Christmas bun with buttery dough with a hint of floral spiced saffron.

8 cups flour
1/2 cup sugar
3/4 cup butter
1.5 tsp cardamom
1 tsp salt
0.5 gr saffron
2 cups milk
1 egg ( and 1 more for brushing )
48 raisins
50 gr fresh yeast
  1. In a medium saucepan, melt the butter, and add the milk. Remove from heat and whisk in the saffron. Let this mixture come to lukewarm, around 38C (100F)

4 1/2 c bread flour
