I love my Aunt Opal. She lived on a ranch in Nevada and I was so excited any time we could go visit her. This is one of her family recipes given to me many years ago. It takes a regular meat loaf to the next level. After eating it, you will probably love Aunt Opal too!

1 1/2 lbs. ground beef
1/2 lb. pork sausage (I used hot)
2 eggs
1/4 c cracker crumbs
1/4 c ketchup
3/4 c cheddar cheese, grated
Stuffing
6 slices bread, toasted
1/2 c butter, melted
1 small onion, diced
1/2 c celery, chopped
1/2 tsp. salt
pepper to taste
1/4 tsp. garlic salt
Mix meatloaf together. Divide in half and pat into two ovals. Make stuffing by melting the butter (in a fry pan on your camp stove or in your Dutch oven) and adding the onion, celery and spices. Saute...
