For the salad:
1 lb salmon filets ( 3-4 ounces each )
1 tsp dried Italian seasoning
salt and pepper to taste
2 tsp olive oil
4 cups romaine lettuce ( chopped )
1 cup cherry tomatoes ( halved )
1 cup cucumber ( quartered and sliced )
1/2 cup kalamata olives ( halved )
1/4 cup red onion ( thinly sliced )
1/3 cup feta cheese ( crumbled )
1/4 cup fresh dill ( minced )
1/2 cup green bell pepper ( chopped )
1 avocado ( peeled, pitted and sliced )
For the dressing:
1/4 cup olive oil
1 tsp Dijon mustard
2 tbsp red wine vinegar
1 tbsp lemon juice
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp dried oregano
salt and pepper to taste
  • Season the salmon fillets with the Italian seasoning, salt and pepper.
  • Heat the 2 teaspoons olive oil in a large pan over high heat.
  • Add the salmon and cook for 4-6 minutes per side...
