Salted Caramel Chocolate Chip Cookie Bars


The only thing better than a great chocolate chip cookie recipe, is a recipe that includes delicious, salted caramel sandwiched in the middle of a cookie bar. There is no way to describe how good these are without just eating them.

2 1/4 C all purpose flour
1/2 t salt
1/2 t baking soda
10 T butter, melted and cooled
1 C brown sugar
1/2 C white granulated sugar
1 egg
1 egg yolk
2 t vanilla extract
2 C chocolate chips/chunks
10 oz caramel candy
3 T heavy cream
Sea Salt
1.Preheat oven to 325. 2.Prepare a 9x13 baking dish by spraying with non stick spray. 3.Whisk together flour, salt and baking soda in a medium bowl. 4.Using a stand mixer or hand mixer, cream together butter, brown sugar and granulated sugar. Add egg, egg yolk and extract. Mix until smooth. Add the dry ingredients, while mixing, 1 C at a time, until combined. Stir in the chocolate chips. 5.Press half the cookie dough into the prepared pan. 6.In a microwave safe bowl, add caramels and cream. Microwave 20 seconds. Stir. Cook an additional 20 seconds. Stir. Continue until caramel is melted. (mine took me 1 minute total) 7.Pour caramel over layer of cookie dough and spread to make an even layer. 8.Sprinkle sea salt over caramel. 9.Add remaining cookie dough to top of caramel, by dropping in spoonfuls. No need to smooth, it will spread as it cooks. Sprinkle with additional sea salt. 10.Bake for 25-30 minutes, until edges are pulling away from the sides. 11.Cool completely before cutting into squares.
