Savoury Pancetta and Cheese Waffles

This is the perfect excuse to have Waffles for dinner! These waffles are packed with flavour. Top with a fried egg and you have yourself a delicious brunch or dinner!

2 eggs, lightly beaten
2 cups flour
1 3/4 cup milk
1/2 cup oil
1 tablespoons baking powder
1/4 teaspoon salt
6 ounces pancetta, cooked and chopped
3/4 cup shredded cheese (I used cheddar)
3 green onions, chopped

Compound Butter
1 stick of butter, softened
1 tablespoon lemon zest
4 basil leaves, roughly chopped
1 garlic clove, grated

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
