!For the scallops
1 dozen large sea scallops
3 tablespoons butter
1 teaspoon coarse sea salt
1 teaspoon cracked black pepper
!For the sauce
1/2 cup dry white wine
2 teaspoons fresh lemon zest
1 teaspoon honey
1/4 teaspoon Dijon mustard (I use Maille mustard. It’s only slightly more expensive and so good!)
1/2 cup heavy cream
1 teaspoon minced parsley
1/2 teaspoon kosher salt
1 teaspoon fresh cracked black pepper
!For the glaze:
Store bought ( bottled balsamic glaze )
Fresh thyme as a garnish
!For the scallops: Pat the scallops with paper towels until very dry. Season both sides with salt and pepper and pat seasoning onto the flesh. Preheat a large skillet on stovetop over medium high heat....
