Made with store bought sugar cookies and filled with a delicious lime curd. Perfect for your next barbecue!

For the Crust:
1 package of store bought refrigerated Pillsbury sugar cookie dough
For the Filling:
2/3 cup granulated sugar
1 tablespoon cornstarch
1/2 cup FRESH lime juice
1/4 cup water
2 tablespoons butter
3 egg yolks, lightly beaten
Optional: green food coloring and lime zest
