Sheet Pan Sweet Potato Hash with Baked Eggs & Romesco


An easy sheet pan breakfast with roasted sweet potatoes, onions, crimini and shiitake mushrooms and topped with baked eggs, chunkcy slices of avocado and served over leafy greens with romesco sauce. A tasty breakfast fit for a crowd!

Who doesn't love having a good Caesar salad! However, having Caesar salad in restaurants is never a healthy choice. As, it is always loaded with excess fats and calories. I have prepared an entirely healthy homemade Caesar salad in a tortilla bowl that rivals that of any restaurant.
