Creole Shrimp and Cornbread Bruschetta. This delicious and easy appetizer is made in minutes and will be he hit of any party.

1 box cornbread mix, baked in a 9x13 baking dish (so its thin)
1 lb raw shrimp
1 tbsp. olive oil
½ cup chopped onion
½ cup chopped red pepper
½ cup chopped green pepper
Mascarpone cheese
