Shrimp Scampi Over Risotto

Scampi:
12 oz Bag Large Frozen Raw Shrimp ( Thawed and peeled )
4 Cloves Garlic ( Minced )
1 Tsp Parsley ( Chopped )
1/3 Cup White Wine
1/3 Cup Lemon Juice
6 Tbsp Butter
1/8 Cup Heavy Cream
Risotto:
1 1/4 Cup Arborio Rice
3 Tbsp Butter
3 Cloves Garlic ( Minced )
1/3 Cup Onion ( Diced )
4 Cups Chicken Broth
1 Tsp Salt
1/2 Tsp Pepper
1/3 Cup Parmesan Cheese
  1. In a large pan over medium heat melt 2 tablespoons of butter, add garlic and onion. Saute for 2 minutes, add the remaining butter and the rice.

  1. Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
