1 lb shrimp ( thawed if frozen, peeled and de-veined )
1 tablespoon yellow Thai curry powder ( yellow curry paste can be used instead )
1 tablespoon vegetable oil
1 inch piece ginger ( minced or grated )
3 garlic cloves ( minced or grated )
1 chili pepper ( seeds removed, finely diced )
1 lb sweet potato ( cubed )
14 oz lite coconut milk ( 1 14-oz can )
1 cup chicken stock
1 bell pepper ( diced )
1 zucchini ( small zucchini, cubed )
2 tablespoons lime juice ( about 1 lime )
2 tablespoons cilantro leaves ( chopped )
