I love the flavor and texture of imitation crab. I love it on salads and now my new favorite is it have it on sandwiches. If you are looking for a quick lunch or even a quick dinner, I would highly suggest this Simple Crab Sandwich!

2 Tablespoons of Mayonnaise
2 teaspoons of Yellow Mustard
1/2 teaspoon of lemon juice
8 ounces of Imitation Crab Meat
Salt and Pepper to taste
4 slices of bread (or two rolls) toasted in the broiler
2 slices Mozzarella cheese
2 teaspoons of Yellow Mustard

2 slices Mozzarella cheese
In a bowl mix together mayo, mustard, lemon juice, crab meat, salt and pepper. Place crab meat on toasted bread. Put some mozzarella on top of the crab meat and put together your sandwich.
