Simple Oatmeal Pancakes

You can serve oatmeal in many ways. Pancake is one of them.

1 cup oatmeal
1/3 cup flour
1 tablespoon sugar
1 tablespoon flax meal
1/2 tablespoon baking powder
¼ teaspoon cinnamon powder
1 cup milk
1 tablespoon olive oil
Mix oatmeal, flour, sugar, flax meal, baking powder and cinnamon powder. Put the above dry ingredients in a blender, then add milk and olive oil, blend until mixed. Remove from blender and let rest for 10 minutes. Use a nonstick frying pan. Pour half of the oatmeal mixture into the pan, let it spread out. Use a spatula to help making the pancake evenly thick. When the bottom is set, flip over, press down with the spatula, and cook until the other side is done too. Just for fun, you can cut the pancake into the shape you like, and serve with fruits.
