Simple Vegan Lentil Loaf

I give you a simple gluten-free vegan lentil loaf recipe requiring only well-known ingredients. It's hearty, holds together well and is full of flavour.My vegan lentil loaf has many great qualities:

  • Low-fat
  • Oil-free
  • Gluten-free
  • Low-glycemic
  • Candida diet friendly
  • Made of whole food ingredients

My favourite sauces for this lentil loaf are Tahini-Chickpea Dressing (on photo) and Oil-Free Veggie Sauce.

For lentils:
10.6 oz dry split red lentils
3.5 oz dry brown lentils
1 bay leaf
2 tsp vegetable broth powder
25 oz water
For sauteed veggies:
1 small yellow onion
2 medium celery stalks
1 cup shredded carrot
3 garlic cloves
0.14 oz fresh rosemary leaves
1.5 tbsp chopped fresh thyme
0.14 oz fresh sage leaves
0.5 tsp smoked paprika
For lentil loaf:
3 tbsp ground chia seeds
2 handfuls walnuts
2 tbsp buckwheat flour
to taste Himalayan salt
to taste black pepper

This easy Cheesy Hashbrown Casserole is loaded with cheese and so quick and delicious. It's an easy side dish recipe for any night of the week, but great for serving for holidays or for potlucks! The finishing touch on this Hash Brown Casserole is the buttery Rice Krispies that make it the BEST ever! This recipe is also frequently referred to as "Funeral Potatoes".

1 can cream of mushroom soup
1 cup sour cream
1/2 cup milk
1 cup shredded cheddar cheese
1/2 cup butter
30 oz shredded hash browns ( frozen )

This delectable corn salad brings it all together with fresh corn, sweet red bell peppers, sun ripened tomatoes, cilantro, minced jalapeno, chopped scallions and feta cheese all in a lightly sweetened lime vinaigrette.

Lime Vinaigrette:
3 tablespoons fresh lime juice
1/2 tablespoon honey
1/8 teaspoon ground cayenne pepper
1/8 teaspoon garlic powder
