A healthy Shanghai-style borscht recipe made with tomatoes, beef stew meat, and onion sauteed in a roux and slow cooked in beef bone broth. This beef borscht is the perfect comfort food on a chilly day.

2 tbsp olive oil
2 tbsp butter
1/4 cup all-purpose flour
1 medium onion, sliced
1 pound beef stew meat
2 stalks celery, chopped
1 cup carrots, chopped
1 large russet potato, diced
4 cloves garlic, minced
2 cups beef bone broth
6 oz can tomato paste
14.5 oz can diced tomatoes
1 bay leaf
1 tsp salt
2 tbsp brown sugar
1/2 tsp ground black pepper
3 cups green cabbage, thinly sliced
chopped fresh basil for garnish
