Gingered Pumpkin Butter made in the slow cooker - so simple & tasty WITHOUT using canned pumpkin.

1- 3-5 lb pumpkin- cut, skinned & cubed
1-1/2 cups granulated sugar
3/4 cup brown sugar
3 tbsp cinnamon
2 tsp nutmeg
1 tsp pumpkin pie spice
1 tsp ginger

Add all ingredients to slow cooker
Cover & cook on high about 3-4 hours - stirring each hour
Once pumpkin pieces become softer (around 3 hours in to cooking) scoop out into blender & blend to smooth...
