Slow Cooker Ham & Kidney Bean Soup

Don't let that leftover ham bone go to waste! Grab your slow cooker and whip up a pot of Slow Cooker Ham & Kidney Bean Soup ~ truly easy, truly delicious, and truly one of my absolute favorites.

1 ham bone {leftover from cooking a ham}
4 c. vegetable broth
1 (14.5 oz) can diced tomatoes
2 (16 oz.) cans dark red kidney beans, drained & rinsed
2 onions, chopped
3 stalks celery, sliced
3 carrots, peeled & sliced
2 potatoes, peeled & diced
1 T. dried parsley
1/4 tsp black pepper
Place all ingredients in slow cooker. Cook on low setting for 6 to 8 hours, or on high setting 4 to 6 hours. Taste cooked soup; if needed, add 1/4 to 1/2 teaspoon salt.
