Slow Cooker – Light Sweet and Sour Pulled Pork Sandwiches

The savory flavors of the barbecue sauce accompanied with sweet coleslaw really makes this sandwich VERY flavorful! This sandwich is on the light side at only 320 calories per sandwich.

2-1/2 to 3-pound boneless pork shoulder roast

1 onion (medium), chopped

1 green bell pepper (medium), chopped

1 teaspoon dried thyme

1/2 teaspoon dried rosemary

1 teaspoon salt

1/2 teaspoon pepper

1/2 cup chicken broth

1 sauce recipe (below)

coleslaw (homemade or from the deli)

20 whole grain slider buns or dinner rolls

Ingredients

1 cup balsamic vinegar

3/4 cup ketchup

1/3 cup brown sugar, packed

1/4 cup honey

1 tablespoon Worcestershire sauce

1 tablespoon Dijon-style mustard

1 clove garlic, minced

1/2 teaspoon pepper

1/4 teaspoon salt
