1 cup diced onion (1/2 of 1 large onion)
2 Tbsp butter
1 garlic clove, minced
8 oz sliced mushrooms
1 cup long grained brown rice
1/2 cup broth (or 1/2 cup water + 1/2 tsp chicken bouillon)
2 cups chicken broth
1 cup water
1/3 cup grated Parmesan cheese
Salt and pepper, to taste
