Slow Cooker Thai Pumpkin Soup

Easy to make slow cooker Thai pumpkin soup - a bit spicy, a bit creamy, a whole lot of amazing. The perfect meal for a cold fall day!

1 small onion, diced
1 red pepper, diced
2 cloves garlic, minced
1/2 teaspoon ground ginger
1 1/2 tablespoons Thai red curry paste
3 cups pumpkin puree (canned or homemade)
5 cups chicken broth
1 lime, juice
1/2 teaspoon sriracha sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1 can (400 mL, 13.5 fl oz) coconut milk (I used light)
1/3 cup chopped cilantro, plus more for garnishing
1/2 cup peanuts, for garnishing
