Seriously Delicious Soft Cake with Apricot and Rum Cream. A Norwegian party cake that we call Turtle Cake (Skilpaddekake). You wouldn't want it to end!

250 gr sugar
250 gr potato flour
125 gr flour
2 tsp baking powder
240 gr sugar
2 cups milk
2 cups heavy cream
2 vanilla beans
8 egg yolks
8 tbsp cornstarch
rum essence
10 tsp apricot jam
2 cups powdered sugar
10 jelly candies
