Sorrel (sour sour leaves) salad

Sorrel salad recipe is not a common summer salad, but yet one that can refresh your palette from time to time. This salad is made with white sweet potatoes, avocado, tomatoes, and basil, and drizzled with a mustard vinaigrette.

Vinaigrette:
1/4 cup wine vinegar
2/3 cup extra virgin oil
1 tsp mustard
1 tsp honey
dash salt
dash pepper
Salad:
each 1 big purple sweet potato ( diced )
each 2 avocadoes ( diced )
1 cup cherries tomatoes halves
1 cup basil leaves
1 cup fresh sorrel ( chopped )
dash Feta cheese (optional)

Salad:
