Southern Lima Beans with Ham

1 lb. large dried lima beans
2 T olive oil
2 medium onions
1 stalk celery
4 cloves garlic
1 smoked ham hock
1 bay leaf
8 c water
1/2 t kosher salt
1/2 t ground black pepper
  • Rinse and sort the beans. Set aside.
