Southern Squash Casserole

1 tablespoon olive oil
1 tablespoon butter
2 pounds yellow summer squash ( sliced 1/4-inch thick )
1 medium onion ( chopped )
2 cloves garlic ( minced )
1/2 cup sour cream
1 egg ( beaten )
1 cup (4 ounces) shredded sharp cheddar cheese
1/2 cup freshly grated Parmesan cheese ( divided )
3/4 cup cracker crumbs ( like Ritz )
2 tablespoons butter ( melted )
Heat a large deep skillet over medium heat. Add olive oil and butter. Add the sliced squash and chopped onion and season generously with salt and pepper. Sauté for 10 minutes, stirring occasionally....
