Southwest Chicken Jalapeño Popper Salad

A filling chicken salad inspired by the flavors of a jalapeño popper.

12 ounces boneless skinless chicken breasts
black pepper, to taste
1 head romaine lettuce
1/2 pint grapes tomatoes (about 16) sliced in half
1 large avocado, diced
1 cup frozen corn, thawed
1/4 cup diced red onion
2 ounces cheddar cheese, cubed
1 cup black beans, rinsed and drained
4 slices bacon, cooked and crumbled
tortilla strips
pickled jalapenos
Jalapeno Popper Dressing:
4 ounce cream cheese
1/4 cup sour cream
1/4 cup buttermilk
1/4 cup fresh or pickled jalapenos
1 clove garlic
1 teaspoon dried cilantro
black pepper, to taste

Add all of the ingredients into a food processor and process until well blended.

Refrigerate for a few hours before serving.
