School night meals don’t have to be complicated! This Southwest Chipotle Stir Fry makes busy evenings so much easier and yummier!

1 Tbsp. minced garlic
1/2 lb. kielbasa ( diced )
1 can (8 oz.) pineapple tidbits ( drained )
3.5 oz. chipotles in adobo sauce (remove the seeds and insides for less heat), chopped
1 can corn ( drained optional )

1/8 c. good BBQ sauce
1/8 c. teriyaki sauce

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
