This Southwest Scramble Tostada is simple, 20 minute breakfast that is sure to get your day off to a great start!

2 tablespoons unsalted butter
1/4 cup diced green pepper
1/4 small red onion, diced
1/4 cup fresh or frozen corn
1 roma tomato, diced
Salt and pepper, to taste
8 eggs, beaten
1/2 cup shredded cheese
4 tostada shells, warmed
Salsa, sour cream, cilantro for topping, if desired
