Southwestern Chopped Salad with Cilantro-Lime Dressing

With a winning combo of ingredients and combined with the citrus-y Cilantro/Lime Dressing, this salad is a delicious, light and healthy summer dish. If you want it to be a little more hearty, top it with some grilled chicken or shredded BBQ pork. Mmmmmm... I just crumbled some Gorgonzola cheese over the top (Blue Cheese or Feta would also be yummy), served it with a side of fruit, and called it a meal.

Large head of romaine

15 oz. can black beans, rinsed and drained

1 large orange bell pepper

1 pint cherry tomatoes (I just de-seeded and diced a few regular tomatoes)

2 cups corn (I used canned, drained)

5 green onions

Creamy Cilantro-Lime Dressing (recipe below) or other dressing of choice

{CILANTRO-LIME DRESSING}
Yields 3/4 cup dressing

1 cup loosely packed cilantro, stems removed and roughly chopped
1/2 cup plain Greek yogurt
2 Tbsp. fresh lime juice
1-2 garlic cloves
1/4 cup olive oil
1 1/2 tsp. white vinegar
1/8 tsp. salt
For the salad, finely chop romaine, bell pepper, tomatoes, and green onions. Place all ingredients in a large bowl and stir to combine. Toss with desired dressing. For the dressing, puree all ingredients...
