Spanakopita (Spinach Pie)

Spinach pie is one of those sort of strange sounding recipes that turns into a literal party in your mouth if you can get past the title. Just the fact that the word “spinach” is combined with “pie” might be enough to send you running, but stick around my friends, & you will be pleasantly surprised by the warm, buttery flavors of the delicate phyllo & the salty herbiness of the spinach & feta.

1/2 cup olive oil
2 tbsp olive oil
4 medium onions, chopped
6 cloves garlic, minced
Coarse salt & ground pepper
6 packages (10 ounces each) frozen chopped spinach, thawed & squeezed dry
1 pound feta cheese crumbled
1/2 cup grated Parmesan cheese
1/2 cup plain dried breadcrumbs
2 teaspoon dried dill
8 large eggs, lightly beaten
8 ounce frozen phyllo sheets, thawed & thinly sliced
