4 tbsp. Grapeseed Oil ( divided )
1 Large Yellow Onion ( diced )
1 Poblano Pepper ( diced )
1 Red Bell Pepper ( diced )
5 Garlic Cloves ( minced )
3 EAR Corn ( remove corn from the cob )
2 cups Long Grain Rice
4 1/2 cups Chicken Stock ( divided )
2 tsp. Kosher Salt
1 BUNCH Cilantro ( for garnish )
Chicken:
4 Bone-In Chicken Thighs
4 Bone-In Chicken Drumsticks
2 tsp. Kosher Salt
1 tsp. Black Pepper
1 tbsp. Achiote Powder
2 tsp. Ground Cumin
2 tsp. Coriander
2 tsp. Garlic Powder
1 tbsp. Ancho Chile Powder
1/4 cup Red Wine Vinegar
1/4 cup Grapeseed Oil

FIRST STEP
