Spicy Chicken Noodle Soup

A delicious homemade soup with a bit of spice.

2 large boneless skinless chicken breasts, cooked and shredded
2-4 tablespoon olive oil
1 medium onion, chopped
1 cup carrots, chopped
3/4 cup celery, chopped
2 cloves garlic, minced
1-2 teaspoons crushed red pepper
1 teaspoon ground ginger
8-10 cups low sodium chicken broth
1/4 cup milk or cream
16 ounce wide egg noodles
black pepper to taste

In a large pot bring 8 cups of chicken broth to a boil. Add in the carrots and celery. Reduce heat and simmer until vegetables are almost tender.
