1 pound shrimp ( peeled and deveined I like using 31-40 size )
2 tablespoons finely minced cilantro ( more for serving )
2 garlic cloves ( finely minced )
1 teaspoon cumin
1 teaspoon chili powder
½ teaspoon smoked paprika
½ teaspoon onion powder
½ teaspoon kosher salt
3 tablespoons olive oil ( divided )
1 tablespoon butter
Juice of 3 limes
8 flour or corn tortillas ( warmed for serving )
1 cup of creamy cilantro jalapeno sauce
1 cup crumbled Cotija cheese
1 cup finely shredded cabbage
¼ cup roughly chopped fresh cilantro
1 jalapeno ( seeded and minced very fine )
¼ small red onion ( cut in half and sliced thinly )
½ cup finely diced red bell pepper
½ cup finely diced fresh pineapple
