This homemade Spicy Turkey Meatballs with Veggies are healthy and full of flavour. It is made with carrots, mushrooms, peppers and onions. Enjoy!!

1 pound extra-lean ground turkey
1 cup yellow pepper chopped
1 cup mushroom (any type of your preference) chopped
½ cup carrot chopped
1 cup onion chopped
½ cup parsley chopped
¾ cup gluten-free breadcrumbs
2 organic eggs beaten
½ tbsp garlic powder
1 tsb coriander
1 tsb cumin
½ tsb chili pepper powder
Salt and pepper to taste

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
