Spinach Pasta Salad

8 ounces pasta ( I used rotini )
1/2 very small red onion thinly sliced and cut into 1-inch pieces ( about 1/4 cup )
3 large cloves garlic minced
6 tablespoons olive oil
1/4 cup red wine vinegar
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
4 cups baby spinach ( or whatever greens suit your fancy )
2 cups grape tomatoes halved
grated fresh Parmesan optional
