Spinach Salad

1 Bunch of Spinach
1 head lettuce of your choosing
3/4 lb. of grated Swiss cheese
1 red onion
3/4 lb. sliced, fresh mushrooms
4 slices of bacon
Dressing:
3/4 c. white vinegar
1 1/2 c. vegetable oil
3/4 c. sugar
1 1/2 tsp. salt
1 1/2 T. onion flakes
1 T. poppy seeds
1 tsp. dry mustard
Slice red onions very thinly and put in a bowl with the sliced mushrooms. Next, blend all the dressing ingredients in a blender and pour over onions and mushrooms and refrigerate overnight. Wash and take stems off one bunch of spinach; roll up into a paper towel and refrigerate. Wash and put apart lettuce and roll up into a paper towel and refrigerate also. Before ready to serve cook the bacon, drain and crumble and shred the Swiss cheese. Put spinach and lettuce in a big bowl, mix in the onion and mushroom dressing, add in the cheese and bacon and toss until all mixed together. Ready to serve!
