One of my dearest childhood memories is my mom making the split pea soup in the kitchen. It made the whole kitchen smell just amazing. Split pea soup is definitely one of my favorite. Thick satisfying texture of fell-apart peas, added sweetness of carrots and smoky salty flavor of ham. You can't beat this classic combination.

Ridiculously easy and quick vegan spinach soup. 5-ingredients, but nothing fancy or hard to get. Creamy, healthy, not to mention kid-friendly.

1 tbsp Olive oil
1 Onion
2 cloves Garlic
300 grams Fresh Spinach Leaves ( approx. 10 oz )
600 ml Vegetable broth ( approx. 2.5 cup )
2 Potatoes
Salt
Pepper

Wash the fresh spinach leaves. Peel and finely chop onion and garlic. Peel and dice potatoes. The smaller you dice them, the shorter will be your cooking time.
