Spongy madeleines recipe is incredibly easy to make and will be eaten as fast as you make them. Madeleines are French mini cakes that are shell shaped and are plump and spongy. They are very popular in France and are usually flavoured with vanilla or citrus zest.

30 madeleines
1 cup all-purpose flour
3 eggs
1/2 cup sugar
1 1/4 stick butter
1/4 cup milk
1/4 cup oil
1 tsp baking powder
2 tsp honey
1 flat tsp salt
2 tsp lemon zest
1 tsp vanilla
