Spring Green Roasted Asparagus & Garlic Soup with Herbed Goat Cheese Swirl and Crumbled Prosciutto

A quick, easy, and delicious veggie soup with the look and taste of spring thanks to bright flavorful green asparagus and roasted garlic. Tastes like it's been cooking all day but instead the oven does all the hard work in about 30 minutes! The herbed goat cheese, crumbled prosciutto, and ciabatta croutons glam it up even more making it garden party perfect!

2 generous servings or 4 appetizer servings
Soup Ingredients:
1/2 pound Fresh asparagus ( If you prefer to use frozen I recommend Trader Joes Grilled Frozen Asparagus )
1 Head of Garlic
Drizzle of Olive Oil
1 1/2 cups Vegetable Broth
2 tbsp. Mascarpone Cheese
Salt and Fresh Ground Pepper
Goat Cheese Swirl:
4 oz Herb or Plain Goat Cheese ( If using plain you will also need a couple tbsp of fresh herbs of choice like basil or tarragon. )
4 oz Mascarpone Cheese
1 tsp Lemon zest ( Optional )
Drizzle of Olive Oil
Sprinkle of Salt
Toppings:
2 Slices Ciabatta Bread
2 Slices Prosciutto
Spring of Fresh Basil for Garnish ( Optional )

Preheat oven to 400.
