I love cookies. I love sweets in general, but there is something about a good cookie that makes everything feel better sometimes. These cookies are simple and unbelievably delicious!

FOR THE COOKIES
1 cup butter softened
1 cup powdered sugar
1 egg
1 tsp. vanilla extract
1 tsp. salt
2 1/2 cup flour
zest of one lemon
FOR THE ROYAL ICING
4 cup powdered sugar, sifted
2 tbsp. meringue powder
5 tbsp. water plus more to thin out as needed
