2 lbs yellow squash ( cut into 1/2 thick slices )
1/2 cup onion ( diced )
salt and pepper to taste
1/4 tsp dried thyme
1/2 cup heavy cream
1 cup milk
2 1/2 cups cheddar cheese ( divided use )
1 cup buttery crackers ( crushed )
2 tbsp chives ( thinly sliced )
