Stir-Fried Potatoes and Peppers Recipe

I came home one night to the smell of these potatoes cooking (frying?) on the stove and they have been a staple in our meal rotation ever since! They really are the perfect side dish that can be thrown together in a matter of minutes!

6-8 medium potatoes, thinly sliced (the thinner they are sliced, the quicker they will cook)
1 medium onion, sliced
1 medium green bell pepper, sliced
3 tablespoons olive oil (add more if needed)
salt and pepper to taste
seasoning salt to taste
water (as needed)
