A yeasted cake with citrus notes filled with vanilla pastry cream and fresh strawberries.

For Bread:
2½ cups bread flour
2 tablespoons water, lukewarm
6 large eggs at room temperature, separated
1½ teaspoons instant yeast
4 teaspoons granulated sugar
1/3 cup butter at room temperature
1/2 tablespoon orange zest
1/2 tablespoon lemon zest
1 teaspoon salt
¼ cup butter for greasing the work surface, hands, dough scraper & baking pan
Syrup:
3/4 cups sliced strawberries
1 cup water, divided
1/2 cup sugar
1/2 tablespoon lemon juice
Pastry Cream:
2 Tablespoons cornstarch
4 Tablespoons sugar
1/8 teaspoon sea salt
1 egg
1 cup whole milk
1/4 teaspoon vanilla extract
2 cups sliced strawberries
