Strawberry-Spinach Salad - a Summertime Classic

When it's strawberry season, it's also warm enough that a light salad is a refreshing lunch or dinnertime treat. This one is easy to make, and has a sweet appeal for even the most determined vegetable-avoider in the family. Put it together in minutes from easy-to-gather ingredients.


For another variation, use arugula instead of spinach.


While spinach is packed with nutritional benefits--Vitamin K, Vitamin A and folic acid as well as Vitamin C--arugula contains more Vitamin B5. Strawberries and oranges further bolster the Vitamin C content of this salad that's both nutritious and delicious.


Make it and plate it up right before serving, or put it together in a big salad bowl and chill for half an hour first. Serve the dressing on the side for calorie-counters.

Bagged spinach or equivalent ( washed and trimmed )
Pint of strawberries ( washed, hulled and sliced )
2 navel or Valencia oranges ( peeled and sliced, or several clementines, peeled and sectioned )
Fresh sliced mushrooms to taste
Thinly sliced red onion rings
