Stuffed Amaretti peaches and honey cooked in a slow cooker

SERVES 4:

4 ripe peaches
50g Amaretti biscuits
Grated rind and juice of 1 lemon
25g chopped, blanched and toasted almonds
25g toasted pine nuts
40g light muscovado sugar
25g butter
1 medium egg yolk
6 tablespoons lemon or orange juice
Slow cooker
2 teaspoons honey
Fresh yoghurt or créme fraiche to serve
1. Halve the peaches and remove the stones. Take a very thin slice from the bottom of each peach half so that it will sit flat in the slow cookers cooking dish. Dip the peach halves in lemon juice and place in a dish that will fit in the cooking dish. 2. Crush the Amaretti biscuits and put in a mixing bowl. Add the almonds, pine nuts, sugar, lemon rind and butter. Work with your fingertips until the mixture resembles coarse breadcrumbs. 3. Add the egg yolk and mix well until the mixture just comes together. 4. Divide the Amaretti and nut mixture between the peach halves and press down lightly. Place in the cooking dish and pour around the lemon/orange juice. Cover with a pleated sheet of tin foil and then the lid. 5. Switch the slow cooker to low and cook for 4 to 5 hours, until peaches are tender. Remove the tin foil for the last 30 minutes of cooking. Remove from slow cooker and pour honey on to the peaches. Serve with créme fraiche or Greek yoghurt.
