Stuffed Jumbo Shells

My kids love to eat anything really tiny ( think mini cupcakes ) or really huge ( think jumbo shells ). Apparently, it just tastes better. These shells are easy to make and easy to serve – you already have your portions all put together for you! My kids can manage 2 on an average day and 3 on a “playing outside” day. We serve with yummy crusty bread and they reheat perfectly for an awesome lunch the next day.

1 box jumbo shells (cooked)
1 small ricotta cheese (8oz)
2 cups shredded mozzarella cheese
2 eggs
1 tablespoon parsley
3/4 teaspoons oregano
3/4 teaspoons basil
1/2 teaspoon salt
1/4 teaspoon pepper
1 jar spaghetti sauce
1 cup cottage cheese
1 medium zuchinni (chopped)
2 cups cauliflower (chopped small)
2 cups broccoli
1/2 medium yellow onion (chopped)
