3 bell peppers ( any color )
1 tablespoon olive oil
1 onion ( minced )
3 cloves garlic ( minced )
1/2 cup celery ( cut into small chunks )
1 tablespoon Italian seasoning
1 teaspoon salt
1/2 teaspoon cumin
1/4 teaspoon red chili flakes
1 pound ground turkey ( or chicken or beef )
1 cup brown rice ( cooked )
1 cup kale ( chopped )
1/2 cup olives ( chopped )
2 cans crushed tomatoes ( 15 ounce each )
5 slices cheddar cheese
