Summer - Lishous Snappy Lemon Ice Box Ice Cream

Grandma used to have some cool, refreshing lemon ice cream bars something like this, and she also made it into an icebox \\\\\\\\\\\\\\\"cake.\\\\\\\\\\\\\\\" Ahhhhh.....Perfect!

1 - 3.4 oz. box instant lemon pudding
1/2 c. milk
1 to 2 qts. vanilla ice cream, softened
1/4 tsp. lemon extract (optional)
1/2 c. graham cracker crumbs
Pour the dry pudding mix into a medium-sized bowl. Add the milk and quickly stir to make a thick pudding. As soon as it is mixed, add the ice cream, about two cups at a time and stir, or use electric mixer. Keep adding ice cream until all is incorporated and tastes to your liking. Lemon extract is an option if you want more flavor. Sprinkle a third of the graham cracker crumbs into the bottom of an 8X8 pan. Pour half of the ice cream mixture over the crumbs and spread evenly. Sprinkle another third of the crumbs over ice cream. Repeat with ice cream and crumbs on top. Freeze 3 to 4 hours before serving.
