Sun-dried Tomato Focaccia Bread Recipe!

1 package dry yeast
1 cup warm water
1 teaspoon honey
2 1/2 cups all-purpose flour
2 teaspoon Kosher Salt, divided
1/2 cup plus 1 tablespoon olive oil, divided
20 small pearl onions, peeled
1/4 cup finely chopped sun-dried tomatoes (to put into the dough)
1/4 cup coarsely chopped sun-dried tomatoes (to place on top of the focaccia)
1/3 cup grated parmesan cheese
